If you 'Stop before saving image' then you should not unmount the image without saving otherwise you will lose all modifications. Instead you must reload the image without unmounting it.Checking 'Stop before saving image' then unloading and loading again the extracted original windows ISO does not make Edge appear in the features or source section (so, I can't untick it).

I agree with the real essence to keep in mind ...This thread is about removing Edge from the installer/ISO not what happens after it is installed (at least for the moment, and I don't foresee that being relevant to this post at this point).
