Your error is related to unattended.xml, this have nothing to do with this tutorial. I encountered it before too, this should be related to something like SPPX or simlar. Can you attach your unattended?
 
I have attached the unattended xml, I have tried shortening the hostname, organisation name and company name still same msg. Also just as a tst i used a answer file from https://www.windowsafg.com/win10x86_x64_uefi.html. This worked but some of the apps i put into the script folder did not install despite following the instructions above. Only one that installed ok was 7zip What is a SPPX?

My advice: Do not reinstall or build images. First start reading, then you should understand this tutorial or maybe my other projects which was created to make deploying custom setups easier..
 
If there was a video guide, it would be nice if everyone benefited from it, there are old videos on youtube, I couldn't understand the subject.

Click on a users name and a little information box pops up. You will see that there is an "ignore" button at the bottom, USE IT.
