When you very first pointed NTLite to your image and converted it into WIM did you perhaps accidentally select the Enterprise version to load and use? Maybe at the end you had trimmed the other editions from the image and now are left only with Enterprise?
It might be worth starting over with the Microsoft ISO (https://www.microsoft.com/software-download/windows11) and then go through those steps, make sure to use PRO 64 bit whenever possible on the Microsoft website and in the NTLite program, then trim away the other editions and process that, before trying to edit it with your tweaks.
When you're using a multi-edition ISO, Setup uses different criteria to pick your install.
For unattended mode, the answer file picks a specific edition (by using image index).
When there's an OEM license in BIOS and no unattended, the licensed edition is selected.
For manual install, Setup tries to match the same edition detected on the system drive (if formatted). When there is no match, Setup checks for the EI.cfg and decides which editions it's allowed to list.
If you're using KMS activation, Pro can upgrade itself to Enterprise. We're not allowed to discuss non-approved activation scripts (for the obvious reasons) if that's what you might be deploying.
