Okay, I got this working - sort of... Turns out I had slipped stream the wrong USB 3.0/1 drivers. So I slipped streamed the correct USB drivers and the Micron driver that came from Micron's website, used Ventoy to install and it worked as the NVMe drive showed up for install and I was able to...
