General Question regarding Windows Update and returning components

I am a returning user (used ntlite for Xp/Win7). In the lockdown i bought ntlite and got a preset that works nice and stable until I enable windows updates.
after just one update Windows Search and the Security-Center returned along with some other stuff.

I am on windows 10 prof 20H2 and I just want to know what the general best practice is. Should I ceompletly disable Windows Updates and then install all crtitical stuff I need via the Live Image in ntlite or is the returning ofd those components not the expected behaviour?

You can use RemoveReinstalls (on NTL top menu Tools) on the Live Image or use your preset on a loaded Live Image again.
