I suddenly went stupid. Basic Win7 ->10 upgrade Q

I need to upgrade some Win7 machines that are in use with Applications and some custom settings. I need to decrud the image, but after that, I seem to keep creating images that moves virtually everything to Windows.old, including the user profiles and docs. I need this as hands off as possible. I hate to post this, but I have gone blank as to what I might be missing. Thanks.
 
Windows.old is created when ISO setup is started from an existing Windows installation, it's like an upgrade.
As far as I understood you, the only issue is that Windows.old leftover from earlier installation?
That is a Windows feature, more info here.

If something configured wasn't applied, then let me know which preset and what to look for, then how did you initiate the setup of that ISO.
