Hello friends, by chance you do not have a
detailed list of fonts that can be deleted and
those that must be kept in Windows 7,
Windows 8.1 and Windows 10 to avoid errors or problems during the installation of Microsoft Office.

There is Office support Compatibility option, keep that and Default fonts compatibilities enabled while removing.
Then remove those fonts that you don't need.
If you see any issues still, attach the preset and state which Office and OS to test on, and what the error is.

Thanks Nuhi, I remember that some time ago I
made some modifications to Windows using
NTLite and still keeping the font compatibility
and the default fonts Office gave error, at that
time I had to use another software that erases
the fonts and still does not break the installation
of Office, I currently have some ideas in mind, I
want to use NT Lite for it, I'll get to work.
