Updating Windows 11 undoes changes

Due to the servicing steps which install Monthly Updates on a live system (as opposed to an offline image), you can't prevent a new Update from installing patches for previously removed components. This will partially restore some features.
You must wait until after applying updates, and run NTLite in Remove reinstalls mode with your old preset.
This NTLite feature compares the live system against the preset, and removes those reinstalled components. You will have to perform this step after every Monthly Update, or choose to disable WU if that's too much of a hassle.

If it bothers you, you can stop the updates from happening altogether and only update as you see fit
