Does the available NTLite activation count restore to 5 upon renewing our license?

New licenses and renewals both work the same way, you get 5 activations. You can apply activations to a new PC, or renew the license on an old PC. The choice is yours to make.

Any PC that has an expired license will continue to work as before, but it won't support any new NTLite features introduced after the expiration date. If you don't want to use a renewal on an old PC, you don't have to.

Is it possible to buy 2 renewals and activate the other next year?

Unactivated licenses don't expire. You can save them for future use, I've done that myself.
