Windows release includes a few bundled Office apps like OneDrive and Teams (Chat). Because Office is a separate division in MS, they're not considered core Windows features, so a placeholder installer is part of the image. It's expected for the scheduled update task for OneDrive to check for the latest version right after Windows install.
There is no OneDriveSetup.exe file in the monthly CU. This file will never change on the image.
If you don't want to wait for OneDrive to self-update, then download the install client from MS and run it in Post-Setup:
from what i am reading at the moment, it does seem pointless changing the onedrive exe, as it is to be updated again next month. as a rule the onedrive app auto updates itself, and from the release notes , the app updates roughly 4 times a month.
